We roast coffee every week on Tuesday, and all coffee orders are dispatched within two working days of ordering.

About the coffee

La Negrita is owned by former surgeon Mauricio Shattah and his wife Liliana.

Mauricio is known for applying a meticulous scientific approach to specialty coffee.

For this lot, ripe Gesha cherries are put into a stainless-steel tank with added yeasts and fermented for 48 hours in a climate-controlled room. After the fermentation; the cherries are dried in a UV protected dark room on raised beds, using only natural infrared and high airflow to dry the coffee for 6-8 weeks. 

Gesha is known for elegant floral notes with complex citrus acidity, but thanks to Mauricio’s unique processing: the flavours are cranked up and transformed into deep and deluxe strawberry candy, sticky tropical fruits, and rounded off with a kirsch booziness.
